Tracy, We haven’t tried this recipe with another cooking method, but it should actually be pretty easy! The objective is to cook the chicken (any way you like, poached, baked, grilled, or even rotisserie) until it can be shredded, and then mix the shredded chicken with the creamy sauce. To cook the creamy sauce on the stovetop, we recommend crisping the bacon in a saucepan and then removing it and adding the water and spices. Once the water is simmering, add the cream cheese a bit at a time (slightly softened would probably work best), whisking until it’s incorporated. Cooked this way, you may need to add a splash more liquid (water or broth, if you prefer) to the sauce, because some of the liquid will evaporate off as the cream cheese melts down. Finally, stir in the cooked shredded chicken and shredded cheddar, and serve! If you try it this way, please let us know how it goes!

Try to stick around one or less. Two max and only once a day.

Calories: The nutrient intake on a ketogenic diet typically works out to about 70-75% of calories from fat, 20-25% from protein, and 5-10% from carbohydrate on a daily basis.  However, these ratios don't work well at very low calorie or very high calorie daily totals.  And although calorie counting is not required, it is important to understand how macronutrient percentages can be affected by caloric intake, so you may want to read my page on calorie counting to get more information on this subject. Again, low or very high calorie intake will skew the percentages of macronutrients. It is also important to remember that fats are super high-calorie foods, especially if you have extra weight to lose and you are doing keto to lose weight. In short, no. Apples even have too many carbs. Pineapples hugely spike insulin. Never consume fruit juices. The fiber is bound to the phytonutrients and the juice is cooked, removing many nutrients. You’re basically just drinking concentrated fructose + corn syrup. As an adult, I wouldn’t consume much fruit, period—except maybe ½ cup berries a day. Conklin's fasting therapy was adopted by neurologists in mainstream practice. In 1916, a Dr McMurray wrote to the New York Medical Journal claiming to have successfully treated epilepsy patients with a fast, followed by a starch- and sugar-free diet, since 1912. Yes, too much lean protein—think turkey and chicken—even lean fish—if you’re consuming that and vegetable only, without fat there, you are at risk of throwing yourself out of ketosis. I am saying give up the grains, the negative effect of these foods outweighs any nutritive value they have.

I am a stage four kidney disease patient. I am also a type one diabetic. I have had diabetes for 37 years. My Internist suggested the Keto diet for me, but there are so many if the foods on the Keto diet that I’m not able to eat because of my kidneys functioning at 22%. How do I reconcile this diet plan to work with my kidney disease? I’m not allowed any dairy, because of my high potassium. Is almond milk ok to drink? I can have berries of all kinds. will this still work for me?

For the purpose of this keto meal plan, you will be making food for Monday morning through Sunday night.  This should provide a full, 7 day comprehensive meal plan for you to follow. On Sunday you will make breakfast and lunch for the 5 day work week as well as the first dinner.  Then mid week you will make a second dinner.  The weekend is more of a free for all with less set parameters. This is the time to experiment and try new things. I am going under the assumption that you have more time to cook and prepare on the weekend and also that you might have leftover food from the week.  If your weekends are totally slammed, consider just premaking all 7 days of food by tweaking the quantities in the recipes.

There are many ways of implementing a low carbohydrate, ketogenic diet plans but most involve following a higher fat, moderate protein, low carb food plan.  (The Atkins diet is one of the most famous ketogenic diets, but certainly not the only one).  Many people think of ketogenic diets as high protein diets but this is incorrect. They are moderate protein diets.

In regimented keto diets, only 10% of total calories per day (about a measly 20 grams!) come from carbs, 20% from protein, and a whopping 70% from fats. Since our bodies preferentially use carbs for energy, cutting them means we have to use something else to keep organs functioning. Our bodies then turn to the glucose stored in our muscles as glycogen for fuel.
While macros will differ a little from person to person, the general rule of thumb for keto is to keep carbohydrates under 5% of your daily caloric intake. As long as you avoid the foods mentioned above, you should be fine. Google “TDEE calculator” if you need some additional guidance on how many calories to eat. I’ve had success following this way of eating as it allows me to eat foods that taste great. There are tons of resources online as well if you need additional guidance. There are many ways in which epilepsy occurs. They effect each person differently, so you'll have to test to see if they effect your health or weight loss goals.

Why higher fat and moderate protein? Fats have little to no effect on blood sugar and insulin levels. Protein does affect both blood sugar and insulin. If you eat too much protein for your ideal body weight or lean muscle mass (usually more than 1.5-2.0 grams/kg lean body mass), it can spark gluconeogenesis and raise blood sugar. Protein will also spike blood insulin levels temporarily, which can interfere with ketone body production. However, it is important to note that this is an individually driven parameter, as detailed in this excellent post from the Optimizing Nutrition blog.  
When you’re burning more ketones, you can start releasing a bit of acetone, which smells like nail-polish remover. Or you might release ammonia. Sometimes you get that sulfur smell. For all of these, increase vegetable consumption. Over time, you’ll be more efficient at burning ketones, and a lot less of this will happen. If you’re getting an ammonia smell, it means you’re eating too much protein and need to cut back. A sulfur odor means there’s a gut issue, and you need to regulate your gut bacteria; you should take a type of probiotic called Pro EM-1, which you can find online.

Don’t make the same mistake I did and get the un-shelled ones. (I tried to use them for a dessert and couldn’t figure out why it was so crunchy…) Hemp seeds have many amazing benefits – it is rich in GLA, good for digestive health, and can even help reduce sugar cravings. Put a handful in a small container or reusable snack bag for a super-healthy snack.
A low carb diet plan is a way of eating that is high in fat, moderate in protein and low in carbohydrates. There are different variations of low carb, and the keto diet is a special type of low carb with added characteristics. The number of carbohydrates will vary depending on your insulin tolerance and activity level, but on average, these are the common numbers of carbs:

Wow!! This was sooo good! Tried another crack chicken recipe with a ranch packet and had to throw away the leftovers…no one would eat them. This, however is much better!! Didn’t change recipe other than use pre cooked bacon that I cut up. Probably would be better with the grease involved, however, this is AWESOME!! Also, my chicken tenders were still 3/4 frozen and I didn’t adjust time. They were just fine. Thanks for sharing!! A def do over say myself, hubby, and kids!!!
As a result of those satiating fats required by the ketogenic diet, you may find you’re not craving snacks as much as you usually do. “I find people who follow the ketogenic diet, they’re just not as hungry, so their snack frequency comes down,” says Dina Griffin, RDN, with eNRG Performance in Littleton, Colorado. “There’s just so much fat in their diet, so they say, ‘I don’t want to eat again,’ or ‘I can’t, I’m just not hungry.’”
These cookies will definitely satisfy your sweet tooth while keeping you in ketosis, says Fillenworth. They're made primarily with coconut and cashews, which are rich in good fats. Although they contain some coconut sugar, these cookies get most of their keto-safe chocolate flavor from unsweetened chocolate. However, Fillenworth notes that a serving of two cookies contains 8 grams of net carbs, which can be too high for some keto dieters. Indeed, there's plenty of research to support ketogenic diets in the treatment of some devastating neurological conditions. But can it really help the average Joe or Joanne lose weight? Well, yes, in theory — especially ultra low-calorie versions. But is it suitable for long-term, sustainable weight loss and improved health? The jury's still out on that.
Lastly, if you're active, you might need to make some adjustments to take that into account. "For the first one to two weeks, temporarily reducing your exercise load can be helpful as your body adjusts to being in ketosis," he says. "Additionally, for those who have an intense workout schedule, carb cycling may be a good option." Carb cycling essentially means you'll increase your carb intake on the days you're doing exercise, ideally just two to three days per week. "While low-carb days may be around 20 to 30 grams of net carbs daily, high-carb days can range all the way up to 100 grams, although it can vary based on your size and activity level," says Dr. Axe. Leftovers will be another thing we will take into consideration. Not only is it easier on you, but why put yourself through the hassle to cook the same food more than once? Breakfast is something I normally do leftover style, where I don’t have to worry about it in the morning and I certainly don’t have to stress about it. Grab some food out the fridge, pre-made for me, and head out the door. It doesn’t get much easier than that, does it?

Initially you may be surprised that on keto diets you eat less frequently.  That’s because the fats are pretty satisfying. But as you normalize and adjust into a ketogenic state, that may change and your appetite may increase.  That’s fine and completely normal.  Use whatever diet you decide to follow as a starting point – it should be “written in pencil” so that you can make changes along the way.  Consider adding an extra meal, marginally increasing the size of the meals or just adding a shake between meals.  It’s up to you – just listen to your body.  For example for me, I added a low-carb “green powder” shake supplement to my regimen along with either flax seed oil or some nuts in order to satisfy my hunger.

Hi Barb, That can definitely be it. Losing when you are close to goal can be more difficult. It could also be that your body’s healthy weight is a little higher than what you’d like – which doesn’t mean you can’t lose, but makes it more difficult. If just eating Keto foods isn’t working, double check the macros for your weight and see if the amount you’re eating needs to be adjusted. You’ll find more help and support in our support group here.

Janie, We haven’t made this recipe in the oven, but yes, we think it would work well! Here’s how we would do it: 1) crisp the bacon on the stovetop; 2) for step 2 in the recipe above, add all ingredients to a 9 by 13-inch casserole dish, cover it with foil, and bake it at 350F until the chicken is fully cooked, about 30 to 45 minutes (the chicken should not be pink in the center, and it should shred easily with a fork); 3) remove and shred the chicken; 4) stir the shredded chicken into the creamy sauce along with the cheddar cheese; 5) top with bacon and scallion and serve. Yes, too much lean protein—think turkey and chicken—even lean fish—if you’re consuming that and vegetable only, without fat there, you are at risk of throwing yourself out of ketosis. Even eating egg whites without yolks greatly spikes insulin. So look to fatty proteins. Fatty cuts of beef, chicken WITH skin, fattier cuts of beef, lamb, and game. Chuck as opposed to 10% lean sirloin.
With a ketosis diet, you tend to eliminate more calcium than usual. Additionally, foods such as cruciferous vegetables, spinach, iced tea or chocolate all have a high quantity of oxalates. Oxalates are naturally occurring substances found in a wide variety of foods; they play a supportive role in the metabolism of many plants and animals, including humans. Oxalates combined with calcium can cause kidney stones.

Beyond just fat loss, ketosis has an additional benefit in that it spares muscle when you’re eating at a deficit. On a normal diet, when you eat fewer calories than you need for the day, your body breaks down muscle and fat in nearly equal amounts to make up for the difference. With keto, your body is primed to burn mostly fat, particularly if you’re meeting your protein goal for the day. This results in a better metabolism and more total fat lost. Low carb recipes offer:
When you consume lots of sugar and have higher levels of insulin on a continuing basis, your cells try to protect you and eventually start resisting or ignoring insulin. Remember, insulin is the key that allows glucose into the cell. So, your cells prevent insulin from working in order to prevent excessive sugar in the cell. This is your body saying, “If you’re going to keep eating sugar, I will block it at the cellular level.”
Fillenworth suggests Brami beans as a great snack for keto dieters, especially since most legumes tend to be too high in carbohydrates. With only 60 calories, 2 grams of fiber, and a whopping 7 grams of protein per 25 beans, these Brami beans are an excellent way to boost protein intake (especially if you need a break from meat). One downside to a ketogenic diet for weight loss is the difficulty maintaining it. “Studies show that weight loss results from being on a low-carb diet for more than 12 months tend to be the same as being on a normal, healthy diet,” says Mattinson. While you may be eating more satiating fats (like peanut butter, regular butter, or avocado), you’re also way more limited in what’s allowed on the diet, which can make everyday situations, like eating dinner with family or going out with friends, far more difficult. Because people often find it tough to sustain, it’s easy to rely on it as a short-term diet rather than a long-term lifestyle.
